This session will outline an extensive 5th grade model food truck unit. The lesson will provide tools, resources, and materials needed to bring food trucks to your classroom. The session will begin by sharing lesson outlines that will participants through introductory activities and student led research and planning. The session will demonstrate how students worked with “business partners” to design their own unique 1”:12” scale food truck concept including menus, themes, food truck interiors, exteriors, and lots. Additionally, students used Canva’s AI Magic Student to design custom logos for their food truck concept. 3D modeling and printing were also used to design and print working wheels for the student projects. Although this unit was designed for intermediate level students, applications can be made to middle school and high school levels.

It consists of seven STEM teams, each comprising students from three different grade levels, promoting leadership, community building, and empathy. Educators incorporate EdTech to improve learning; however, EdTech can bring unintended risk to students. Children are being 'datafied' without child or caregiver consent. This datafication can lead to mental health and physical dangers as well as unequitable AI targeting of students while online. This presentation will examine the building blocks of digital privacy; review state and federal laws that dictate students’ privacy rights while interfacing with EdTech; case studies demonstrating the power of datafication of people; and strategies to create a culture of data privacy in schools. Children's safety in classrooms is being jeopardized on a daily basis, through the frequent and routine sharing of student data on EdTech platforms. In Norton fear was forgotten for a second, and a student was given permission to edit school TVs, which struggled to engage with bland, educator-created media. He photoshopped teachers' faces onto TVs for respective Spirit Week themes, and the whole school was hooked. This principle changed Norton, allowing students to customize media and curate student engagement, and it can change others. The talk will have educators come up with uses of school media, and then the presentation will start featuring student examples, showing how students created, and how staff kept power. At the end of the presentation, educators will see how students' ideas are much more targeted to school and student engagement than theirs. As a small school district of fewer than 450 students, implementing these strategies requires creativity. While our challenges may be the same as much larger districts, our capacity is not. Our support of diverse learners has required the school district to foster public-private partnerships and cross-district collaboration.
